Depends on what you mean by PDF search.
Personally, I really like "Preview" provided with Mac OS X. I've
liked it so much, I've printed Microsoft Word files to PDF so I
can use "Preview" just for its search features.

the software I mention is called... yep! and specializes in indexing
and quick accessing pdfs...

Someone suggested a program called "Yep!" It is perfect, but does not
work through a web interface or over a local network. I asked their
programmers but they are about two versions away from that kind of
improvement.

You know, had you explained what you wanted instead of just 'pdf search'
we'd have got here a lot sooner. You want to be able to search the PDFs
using a web interface, and you want to be able to sort the results by the
date (of the PDF ?). You also want to be able to continually add new PDFs
to the list: making one index and searching that isn't enough. What you
want is an abstracter, or a concordance machine. I don't know of any
which are web-facing.
You can implement your own version of the Spotlight search page which adds
a sort-by-date function. You'll have to learn more about how Spotlight
works and how to program in PHP. Otherwise I think you'll have to hire a
programmer.
